Crystallised Ginger
Crystallised ginger has many and varied applications. It is suitable for confectionery (for enrobing and incorporation in say chocolate bars, cakes and biscuits).
It can be used for decoration but is most popular when eaten on its own, and is widely sold in the whole food trade in a wide variety of formats.
The factory source only from their own dedicated growers.
They do not import ginger from outside origins or in the open market.
Ginger Dragon visits both the factory and the growers on a regular basis.
All crystallised ginger is also available Fairtrade and/or Organic.

Product Description
Crystallised ginger sold by Ginger Dragon is available in icing sugar, castor sugar, raw sugar and organic sugar. Fair trade crystallised ginger is now available too.
For crystallised ginger careful selection is made to ensure no hard fibre is present; the flavour is warm but not peppery and the colour is bright and fresh.
Our retail ginger is certified organic and fair trade is available too.

Syruped Ginger
Syruped ginger can be used in jams, sauces, marinades as well as bakery for cakes and biscuits. It is also widely used in bottling which was the most common form of preservation a long time ago.
Ginger syrup contains the aroma and pleasant sweet ginger flavour. This is of great benefit in many applications as it will allow the ginger flavour to be present throughout the product.
The traditional product is a semi round or oval ball referred to as stem ginger. However, for the 21st century Ginger Dragon offers prepared products for the convenience of the modern manufacturer.
The term ‘stem’ was used to refer to the part of the ginger from where the stem grew, this being the youngest and most tender part of the plant.

Ginger for this application is carefully selected for a warm flavour, free from all taints, a light golden colour, and no hard fibre.
No bleaching agents are used.
All syrupped gingers are available in Organic and Fair Trade.

Natural, canned ginger extract / juice from Ginger Dragon is available in organic or regular format, with full traceability back to the field.
The factory only use dedicated growers to ensure consistent flavour and quality.
It takes approximately 3 kilos of fresh ginger to produce 1 kilo of canned ginger extract.
This product is intended for use in the production of soft and alcoholic drinks.
All ginger juice/extract is also available Fairtrade and/or Organic.
Product Description
Our ginger extract / juice is crushed from fresh ginger grown in the mountainous Fujian prince SE China. We do not produce our ginger juice from concentrate.
It has consistent strength and flavour year on year (single strength, typical inclusion 3% with other fruit juices) 2 year shelf life from date of production.

Wet and Air Dried
Fully air-dried fresh ginger hands from facilities in China. Wet ginger also available. This ginger has simply been washed, packed and transported in temperature and humidity-controlled containers. Transported this way there is less weight loss and shrinkage making it a good choice for direct processing in beverages as an example.
